Chicken Noodle Soup

A chicken noodle soup recipe made with a homemade broth, fresh vegetables, savoury chicken, and bow tie pasta. It is a soup that is hearty, healthy and the perfect rainy day meal.

There is something about a nice bowl of hot soup on a cold, fall or winter day. There is something that is so inviting when it comes to homemade soup.

Even on a cold rainy day in the summer, I crave something hot, like soup or pasta to warm me up.

My father-in-law was my inspiration behind this recipe. While my recipe doesn’t taste quite like his, it reminds me of him, as it is one of the most famous and requested dishes he makes. It is SO good.

He actually made a large pot of his soup when he hosted our rehearsal party. It was a huge hit.

WHAT GOES IN CHICKEN NOODLE SOUP

Simple, whole ingredients with a satisfying taste.

For this recipe, I wanted to add some collard greens of some sort. I didn’t have much luck finding any, so I opted for baby bok choy, and they were perfect for this hearty, easy chicken noodle soup recipe.

HOW TO MAKE CHICKEN NOODLE SOUP

A few simple steps for a tasty, hearty chicken noodle soup.

1) The first step in making this soup recipe is preparing the broth. Add the water, chicken broth and diced cubed chicken into a large stockpot and boil for 30 minutes.

2) While the chicken boils, prepare vegetables and spices. After 30 minutes add all remaining ingredients and spices to the pot and boil for another 20 minutes.

3) After 20 minutes, add in bow tie pasta and simmer for another 8-10 minutes.

Three simple steps and a homemade soup on your table in an hour.  

When adding salt, add for desired salt taste. Everyone’s taste is a little different when it comes to salt in the soup.

WHAT TO SERVE WITH CHICKEN NOODLE SOUP

Warm homemade buns, sandwich, pastry, crackers and more.

With this tasty chicken noodle soup, our favourite thing to have with it is fresh warm chewy buns. You can make your own or buy them from the store. If you are buying them from the store, warm them in the oven on the warm setting if you have that option for 7-10 minutes. They’re delicious.

HOW TO MAKE HOMEMADE CHICKEN BROTH

Easy, hearty, tasty and healing.

To make the chicken broth for this easy chicken noodle soup, you just need some water, spices, and a carton and a half of chicken stock. Chicken stock is key, and if you wanna have a little more salt flavour, choose the regular chicken stock versus the no salt added. I like to be in control of salt here, so most all canned/perishable foods around here are salt-free.

To bring this broth together boil with the chicken like mentioned above, and below in the recipe, it’s that easy.

HOW TO STORE CHICKEN NOODLE SOUP

Frozen or bottled; two great storage options for this homemade chicken noodle soup recipe.

This chicken noodle soup is great both frozen and bottled. If you are bottling up the leftovers, heat your bottles in the oven first for better sealing and to maintain freshness.

If you are freezing I prefer to use freezer-safe bags to prevent freezer burn and easy thaw. Fill the bag ¾ way full, release any air, zip up the bag and lay flat. To thaw simply run some warm water over the bag until slightly thawed. Add the slightly thawed ice chunk to a saucepan, and reheat on low-medium heat for 10-15 minutes.

Ingredients

  • 5 cups Chicken breast, cubed
  • 7 cups water
  • 1 1/2 cartons chicken broth, no salt added
  • 3 small baby bok choy, chopped
  • 5 cups carrot/rutabaga, mixed
  • 2 tbsp parsley, dried
  • 1 tbsp Trader joe's everyday seasoning or Mrs. dash herb & garlic
  • 1 yellow onion, diced
  • 2 cups bow tie pasta noodles
  • 2 tsp Sea salt

Instructions

  1. Add the water, chicken broth, and diced cubed chicken into a large stockpot and boil for 30 minutes.
  2. While the chicken boils, prepare vegetables and spices. After 30 minutes add all remaining ingredients and spices to the pot and boil for another 20 minutes.
