There is something that I love about being served my very own personal-sized dessert. It makes me feel extra special! But, I also love those individual servings tend to be served at the right portions, providing someone isnโ€™t serving you the full 8 piece pie.

Healthy mini apple pies came to life this year for thanksgiving. While we did have pumpkin cheesecake I still love something about apples during the fall season. They smell amazing when simmering with some cinnamon.

One of our Thanksgiving traditions is Turkey dinner with all the trimmings, pumpkin dessert of some kind and then leftovers for the next few days. It is always nice to sit around the table and chat about all the things we are thankful for.

WHAT GOES IN APPLE PIE FILLING

A few simple ingredients.

Like most recipes around here, I wanted to keep the ingredients simple for this apple pie filling. All you need is some brown sugar, cinnamon, and apples. Simple, easy, sweet and spicy. I always find that the combination of cinnamon, brown sugar and apple pairs so well together, especially in apple pie.

HOW TO MAKE HEALTHY MINI APPLE PIES

Frozen tart shells and apple pie filling.

To make these healthy mini apple pies you need frozen tart shells in addition to the apple pie filling. Here are the steps to make mini apple pies:

  1. Remove tart shells from the freezer to thaw on the counter at room temp for approximately 1 hour.
  2. Preheat oven to 375F. In a small pot, bring apples, brown sugar and cinnamon to a simmer. Simmer until apples are soft but not mushy, about 3-5 minutes.
  3. Prepare 4 oven-safe ramekins, lightly greased with some spray oil.
  4. Slowly and gently remove thawed tarts from the tinfoil wrapping.
  5. Take one ramekin, place a full tart on the bottom, add in the apple filling 3/4 way full closer to being full, and top with another tart shell. Continue to do this until all apple pies are prepared.
  6. Water wash the tops of the pies, poke with some holes using a fork, place ramekins on a baking sheet and bake for 15-17 mins until the pies are a nice golden brown.
  7. Serve with your favourite ice cream and a dash of cinnamon.

HOW TO STORE INDIVIDUAL APPLE PIES

Refrigerate and heat when needed.

These individual pies are great stored in the refrigerator for up to three days to maintain freshness. To reheat, simply heat the oven to 350F, place ramekins on a cookie sheet, cover with tin foil and heat for 10-15 minutes.
