The Tastiest Skinny Mojito

A Skinny Mojito recipe that will have you “climbing” back for another, without feeling guilty about the {lack of} calories and not bloated! Summer is here, enjoy this one by the pitcher with friends!

Can you believe it? Summer is coming to an end and Mojito’s are one of my favourite summer drinks! I’ve been wanting to get this Mojito recipe up sooner than this… but, life happens.

So, my husband has totally mastered this “cleaner” mojito recipe… he even got my mom hooked… heck everyone is hooked! They taste SO good and this cocktail pairs perfectly with an evening spent on the deck relaxing by the fire.

This recipe is refreshing with the perfect blend of mint, rum, sweetness and lime. Yum!

MOJITO INGREDIENTS

Rum, lime, stevia, mint and more.

This cocktail contains key ingredients giving this Skinny Mojito an amazing flavour and awesome taste. 

  • Rum: Obviously I had to start with the most important part, joking! But, rum is definitely a key ingredient. For this recipe, my husband used a spiced white rum. I am usually not a fan of spiced rum, but in this recipe… omg, say no more. You can omit the rum if you choose and enjoy this as a virgin cocktail too. 
  • Limes: To add a boost of intense flavour and balance out some of the sweetness, a lime or 2 is definitely a must for this recipe. 
  • Liquid Stevia: You can find this ingredient in the baking section at the grocery store near or with the different forms of fo sugars. Liquid stevia works best for the recipe. You need just a very small amount of it to get the perfect amount of sweetness. 
  • Mint: Fresh mint creates this entire recipe. From its beautiful taste and amazing smell… there is much to love about mint. You can use mint to also garnish this drink.
  • Club Soda: Club Soda does not contain calories or sugar. You can also get low sodium which is what we prefer and use for this recipe. You could also use lime flavour LaCroix.

HOW TO MAKE A SKINNY MOJITO

Low calorie; easy to make; tasty and refreshing.

  1. Combine liquid stevia, mint and rum in a cocktail shaker or drinking glass. Crush everything together using a muddler or back of a spoon {muddler works best}. 
  2. One everything is crushed together add 8-10 ice cubes, cover and shake.
  3. If using a shaker, add the mixture to a drinking glass. 
  4. Add half a can of club soda, and fill the rest of the glass with water.
  5. Squeeze in your lime wedge and stir.

There is nothing more refreshing than an icy cold cocktail on a hot summer day. We’ve also made this recipe in pitchers when hosting guests. This cocktail goes over great while waiting for dinner to cook on the grill and eating some appies.

  • 1/4 Lime, wedge of
  • 8 Mint, fresh leaves
  • 1/2 can Club soda
  • 1 shot of Spiced white rum
  • 1/4 cup Water
  • 1 "quick" (very small squirt) squirt of liquid stevia

Instructions

  1. Combine liquid stevia, mint and rum in a cocktail shaker or drinking glass.
  2. Crush everything together using a muddler or back of a spoon {muddler works best}. 
  3. Once everything is crushed together add 8-10 ice cubes, cover and shake.
  4. If using a shaker, add the mixture to a drinking glass.
