My toddler eats everything and anything, we top our Oatmeal Bake with some plain Greek yogurt for added protein and a dash of cinnamon for good measure and devour it! Also, this recipe is freezer-friendly.

Baked Oatmeal is simply a combination of your favourite ingredients, piled together in one dish and baked. A big difference between oatmeal and Oatmeal Bake is obviously the texture.

WHAT GOES IN SWEET BLUEBERRY BAKED OATMEAL

For this Baked Oatmeal Recipe you will need:

  • Unsweetened Vanilla Almond Milk
  • Rolled Oats
  • Eggs
  • Pecans
  • Brown Sugar
  • Butter
  • Baking Powder
  • Cinnamon
  • Vanilla Extract
  • Sea Salt
  • Blueberries (frozen or fresh)
  • Pure Maple Syrup

HOW TO MAKE BLUEBERRY OATMEAL BAKE

  • Preheat the oven to 350 F.
  • Grease an 8×8 baking dish with spray oil.
  • Mix all dry ingredients together, including pecans.
  • Except for the maple syrup and blueberries, mix together the remaining ingredients, and beat in eggs one at a time.
  • Combine the wet ingredients with the dry ingredients, fold in blueberries, and let sit for 5-10 minutes, allowing the oats to soak up the mixture.
  • Transfer to a greased baking dish; ensure the mixture is spread out evenly. Drizzle with the maple syrup.
  • Bake for 30 minutes, until the top, starts to brown.
  • Once cooked, allow the dish to cool completely before cutting, unless serving right away, give it 10-15 minutes to cool before cutting.
  • Using a sharp knife cut around the edges of the dish first, and cut into 9 portioned squares.

HOW TO SERVE BLUEBERRY OATMEAL BAKE

We like to serve our Oatmeal Bake with plain Greek yogurt and a little garnish of cinnamon to bring out a more rich flavour. I love the combination of the tartness of the yogurt and the sweetness of the blueberries.

This recipe is so great leftover. Simply store in an airtight container for 3-4 days, and reheat in the microwave for 45-60 seconds.

Yes! You can freeze Sweet Blueberry Oatmeal Bake which makes breakfast easy for a busy work/school week! Simply wrap preportioned oatmeal tightly in some press and seal, and store in a freezer-safe bag for up to 3 months. Remove from freezer and thaw to room temp or in the fridge overnight, reheat for 45-60 seconds, and serve.
