A warm creamy potato salad recipe that is full of flavour and tasty with every bite. Made using Greek yogurt and herbed with dill spice, this healthy warm potato salad recipe makes the perfect side dish.

Ingredients  

  • Mini Potatoes 680g
  • ¼ tsp Sea Salt
  • ¼ tsp Black Pepper
  • 2 tbsp Extra Virgin Olive Oil
  • ½ cup Maple Bacon cooked, chopped, 6 slices
  • ½ cup Greek Yogurt plain
  • ½ cup Sour Cream light
  • cup Corn niblets drained
  • 4 tsp Chives fresh
  • 1 tsp Dill dried
  • ¾ tsp Garlic Powder
  • 1 tsp Maple Syrup pure
  • ¼ cup Parmesan Cheese shredded
  • ½ cup Cheddar Cheese shredded
  • 1 tsp Lemon Juice fresh

Instructions

  • Preheat the oven to 375F.
  • Line a baking sheet with parchment paper.
  • Halve potatoes, and toss in 2 tbsp of olive oil, salt, and pepper.
  • Bake for 20 mins. Remove from oven, toss, increase oven temperature to 400 F and bake for 6-8 minutes.
  • While the potatoes are baking, prepare your bacon.
  • Prepare the dressing starting with Greek yogurt, sour cream, corn, bacon, chives, dill, garlic powder, maple syrup, parmesan cheese, cheddar cheese, and lemon juice. Mix everything until combined.
  • Once potatoes are cooked, add to a heat-safe bowl, add in the dressing and mix everything together until combined.
  • Garnish with some fresh chives, and serve immediately.

EXPERT TIPS

To up the level of this warm potato salad with bacon, ensure you choose the right potatoes that will hold their shape nicely and crisp well when baked.  
Don’t skip any ingredients such as the maple syrup, it adds such a tasty flavour to this dish.
Don’t overcook the bacon, cook until it’s in between crispy and chewy. It makes for some great texture for this dish.
